Shrimp & smoked gouda grits

My Papa Spuds delivery last week included fresh shrimp. I served the cooked shrimp over smoked gouda cheese grits.  Yunmmy! 

Actually, you can prepare the shrimp any way you like.  I peeled them, seasoned them with salt and pepper and sauteed them in a frying pan with melted butter and garlic just until they turned pink.  Then I served them over the prepared grits. 

Here's the recipe for the grits:

1/4 c  red bell pepper, coarsely chopped
1/4 c andouille sausage, coarsely chopped
1 T butter or margarine
2 c
chicken broth or water
1&1/2 - 2 c milk
1/2 t salt
1 c uncooked quick grits
1 c shredded smoked gouda cheese (1/2 of a round 7-oz. package of smoked gouda cheese)
1 T butter or margarine

Saute chopped pepper and andouille sausage in 1 T butter for about 2 minutes. Set aside. Combine chicken broth/water, milk, and salt in a saucepan.  Bring to a boil.  Stir in grits, reduce heat and cover.  Simmer grits for about 5 minutes or until creamy.  Stir in red bell pepper, andouille sausage, smoked gouda cheese, and 1 T butter. Spoon cooked grits onto plates.  Serve cooked shrimp over grits.  Garnish with chopped basil or parsley.  Serves 3-4.
