Christy's Mixed Berry Pie
      A perfect, and very simple, summer pie recipe that can be customized based on  what berries you have available.  Adjust the sugar and berry content for what works best with your family.  Enjoy!

1 9 inch pie crust
1 quart strawberries
1 handful each, blueberries, blackberries, raspberries (may add 1 or 2 peaches, sliced)
1 cup sugar
2 tbl cornstarch
1/2 package of cream cheese
1 cup water

Bake pie crust and set aside
Chop up as many strawberries as will make a cup.  Mash strawberries.
Mix sugar and cornstarch together and pour into a saucepan.
Slowly add mashed strawberries and water to cornstarch and sugar and bring to a boil, stirring constantly.
Boil for one minute, or until mixture takes a darker red color and a stickier consistency. 
Remove from heat and set aside.
Allow mixture to cool.
Spread cream cheese into pie crust.
Add remaining fruit until pie crust is filled.
Pour strawberry mixture over pie and place pie in the refrigerator for at least 4 hours before serving.
