Ingredients: 2 very ripe peaches, peeled, seeded, chopped
2 tbs light brown sugar
1 sheet of puff pastry
Vanilla ice cream
Method: Remove puff pastry from freezer and allow to thaw for 40 minutes.
Peel, seed, and chop peaches. Toss with 2 tablespoons of light brown sugar. Set aside for 10-15 minutes. Preheat oven to 350 degrees.
Spray baking dish with cooking spray. Place puff pastry in the middle. Spoon peaches in the middle of one half of the pastry. Fold the other half over. Pinch the edges to contain the peach juice.
Cook at 350 degrees for approximately 20-25 minutes or until pastry turns golden brown.
Remove from oven and cool 10 minutes. Slice and serve with vanilla ice cream.
