Rum Raisin Apple Pie

Ingredients:
2 Prepared 9" Deep Dish Pie Shells--Thawed
11/2C Raisins
1/4C Rum
6-8C Apples (your choice)
1/2C Brown Sugar
1/2C White Sugar
1/4C Lemon Juice
2T Butter Cut up
2-3T Flour
1t Nutmeg
1t Cinnamon

Method:
The night before soak the raisins in the rum.

Heat oven to 350
1. Prick the pies with a fork in several places
2. Wash, peel, core and slice the apples.
3. In a large bowl combine the apples, raisins, sugars, lemon
juice and spices. I use my hands.
4. Put fruit mixture in one of pie shells.
5. Dot top with butter.
6. Remove the other pie shell from the foil bottom.
7. Place over bottom shell.
8. Crimp the sides of the top and bottom shell, cutting
off any excess shell.
9. Make 3-5 small slits in the top shell.
10. Bake for for 55-60 Mintues or until done. Crust
should be lighly brown and the pie should be bubbly.
11. Turn off the oven and let the pie cool in the
oven for 15-30 minutes.
12. Serve warn or cold.
