Ingredients: 1 large head of bok choy or 3 small heads of baby bok choy
1 bunch green onions (scallions)
2 teaspoons toasted sesame seeds
1 cup toasted sliced almonds
1 package of Ramen noodles (minus the seasoning) broken up
Dressing:
3/4 cup peanut oil
1/2 cup pure cane sugar or rice syrup
2 teaspoons low sodium soy sauce
2 teaspoons low sodium teriyaki sauce
1/3 cup rice vinegar
Method: Put washed and chopped bok choy and onions in a large salad bowl. Toss with tossed sesame seeds and almond slices. Crumble Ramen noodles over the top. On the stove in small sauce pan heat all of the salad dressing ingredients to a full boil. Boil for 1 minute stirring constantly. Remove from heat and allow dressing to cool for a few minutes before pouring over salad. Serve immediately. Laura C. (Feb 8, 2012 at 9:32 pm)I was skeptical... Raw bok choy? Raw onions? Uncooked ramen? But it is absolutely delicious! The only change I made was to cook the ramen for 30 seconds, leaving it crunchy but not totally raw. Give it a try! | | |
