Black Bean, Mango and Tomato Salad

Ingredients:
1 large mango, diced, divided
3 tablespoons fresh lime juice
3 tablespoons water
2 tablespoons olive oil
1/2 teaspoon ground cumin
1/2 teaspoon sea salt
15 oz can black beans, drained, rinsed
1 cup tomatoes, diced
1/2 cup sweet onion, diced
1/4 cup mint or cilantro leaves, chopped
1 teaspoon minced jalapeno peppers (fresh or canned)

Method:
Mash 1/4 cup diced mango with a fork. Whisk in lime juice, water, oil, cumin and salt. Add remaining diced mango, beans, tomato, onion, mint or cilantro, and jalapenos to bowl. Toss to mix and coat. Serve immediately or cover and refrigerate up to one day.
