Kale Chips Recipe

Greens, Kale |
This works best with Kale that is small and is mostly curled up on the edges.

1 bunch Kale
4-5 Tablespoons Olive Oil
2-3 Tablespoons Brown Sugar
1/4-1/2 Teaspoon Ground Cayenne Pepper (to taste and depending on how potent your pepper is)

Preheat oven to 350

Wash and throughly dry the kale. Tear the leaves into bite size pieces, do not use the center stem.

Mix the oil, sugar and pepper together.

Put the kale in a large zip lock bag, pour in the liquid, seal the bag, shake and mash the kale around to completely coat it.

Arrange kale on a cookie sheet, put in middle rack in oven, set oven to convection bake if you have convection.

When you start to smell the kale (about 10 min) its close to done. Its best if you can see just a small amount of green and the rest is brown.

Sprinkle about 1/4-1/2 teaspoon of sea salt over the kale.
