Ingredients:
1 1/4 cup canola oil
2 1/4 cup pure cane sugar
2 eggs
3 large peeled/diced apples (crisp variety of apples are best)
3 1/3 cup unbleached wheat flour
1/2 teaspoon sea salt
1 tablespoon baking soda
2 teaspoons cinnamon
1 teaspoon vanilla
1 cup chopped walnuts (optional)
vanilla ice cream or whipped cream topping (optional)

Method:
Peel and dice apples and place in a large mixing bowl. Add oil, sugar and beaten eggs. Stir until blended. Add the remaining dry ingredients and stir until blended. Add nuts if desired and bake for 1 hour in a lightly greased 9 x 13 glass pan at 350 degrees. Serve warm with vanilla ice cream or whipped cream if desired.
