baked acorn squash

Ingredients:
1 acorn squash, cut in 1/2
2 tablespoons brown sugar
2 tablespoons softened butter
2 tablespoons maple syrup
salt
freshly ground pepper

Method:
Preheat oven to 300 degrees F. Scoop the seeds and stringy pulp on of the squash cavities and discard (you can bake the seeds and eat them just like you would with pumpkin seeds). In a small mixing bowl combine the brown sugar, butter, maple syrup, salt and pepper. Rub the quash cavities and the cut sides of the squash with the butter mixture and place them on a baking sheet - cut side up. Bake in the preheated over for 1 hour until the squash is tender when pierced witha fork. Serve 1 half per person.
