Butternut Squash bhujya (south asian cuisine)

Ingredients
1 (big)/2 (small) Butternut Squash
1/2 can diced tomatoes in tomato juice
1 medium size onion
1/2 teaspoon cumin seeds
1 teaspoon freshly minced garlic
1 teaspoon freshly minced ginger
1/4 teaspoon Turmeric powder
Chili/Cayenne powder to taste
Salt to taste

Instructions
In warm olive oil put the cumin seeds and let them fry until you start smelling their aroma. Then add sliced onions and fry them until they turn translucent. Then add the butternut squash (cubed) and fry for a few seconds before adding the ginger, garlic, turmeric powder, chili or cayenne powder and salt. Fry all these ingredients together for a few minutes and then add the tomatoes. Cover and leave the dish on medium low (stirring occasionally) until the squash is cooked.
