Parmesan Roasted Broccoli

Ingredients:
Approximately 4 cups of broccoli florets - cut in 2" pieces
3 T olive oil, divided
3 garlic cloves, peeled and sliced
3/4 t salt
1/4 t black pepper
1 t grated lemon zest
1 T lemon juice
3 T toasted pine nuts
1/4 c Parmesan cheese, freshly grated
1 T fresh basil leaves, sliced

Method:
Toss the broccoli pieces on a large sheet pan with the sliced garlic and 2 T olive oil. Sprinkle with salt and pepper. Bake at 425 F for 20-25 minutes until barely tender. Remove from oven and toss with 1 T olive oil, lemon zest, lemon juice, pine nuts, cheese and basil. Serve immediately.
