Rapini & tomato ragu

Broccoli | Tomatoes, Grape, Cherry... |
Ingredients:
1 - 2 bunches Rapini or broccoli Raab, ends removed
1 pt. grape tomatoes
3 cloves garlic, chopped
2 tbl. olive oil
1/4 tsp. crushed red pepper flakes
3 tbl. peccorino romano cheese, grated
1 14 oz. can cannilini beans, or white kidney beans, rinsed and drained

Method:
saute garlic and red pepper flakes in olive oil until translucent, being careful not to burn garlic (start over if you do!) Add tomatoes and sear for a minute or two. Add Rapini or Raab and cover. Turn mixture every minute or two. Broccoli will steam fast! Add beans, turning and continuing to cook only until heated through. Serve in big bowls. Top with grated cheese.
