Hearty Cauliflower Cheddar Soup

Ingredients:
1 large head cauliflower
4 large carrots
1 medium onion, minced
2 cloves garlic, minced
2 Tbs olive oil
12 oz grated cheddar cheese
1/2 tsp carawary seeds
1 qt milk
1 qt chicken stock
1 cup grated Parmesan cheese (optional)

Method:
Chop cauliflower into 1/4" size pieces; clean and grate carrots. Put olive oil in 6-qt stockpot, add onion and garlic and saute. Add chicken stock and bring to a simmer. Add carrots and cauliflower, and simmer 20 min until vegetables are tender. Add milk, and caraway seeds over medium-low heat. While stirring continuously, sprinkle in the grated cheddar. Season with salt and pepper to taste.
