Peach Chutney (low sugar)

4 - 6 large ripe peaches
1/2 onion, diced
1/2 cup golder raisins
1 cup brown sugar
1 cup vinegar
2 cloves garlic, crushed
2 tsp mustard seed
5 tsp chili powder
1 tsp curry spice

Drop peaches into very hot water, one a time, for about 10 sec, which will allow you to peel the skin off easily just by pulling on it with your fingers. Cut the peaches into 1/2 inch chunks. Put all ingredients into a sauce pan, and simmer for about 30 min. Cool the chutney, transfer it to a storage container and refrigerate. Serve as an accompaniment with fish / chicken / rice dishes. Options: Add a dash of ground habanero pepper. Increase brown sugar, vinegar, and cooking time by 2-3x for a more traditional chutney.
