Support Local Farmers:

We work directly with local, NC farmers to deliver the freshest food from their fields to your door!

• Unlike national brands that ship produce around the country from large agricultural operations, we work directly with the small farmers in our area. Many of the same farmers you see out at local markets. They harvest fresh for us every week, and we carefully pack your box the same day that you receive it. We use our own delivery vehicles and staff to keep everything fresh, safe, and handled with care. This is how local is supposed to work!

Aside from fresher, higher quality food, one of the big benefits of ordering food while it is still in the fields is the ability to coordinate meals based on your weekly needs and desires! Every week we compile a list of suggested recipes and meals that you can order for the upcoming week. Papa Spud's portions out the fresh items from our farm partners, or anything else that you do not have on hand, so that you get meals ready to cook, without any excess or waste. It is a much more efficient system that saves everyone money, avoids trips to the grocery store, and also helps local farms prepare for upcoming demand and needs!

This Week's Menu:

	Chicken and Kale Coconut Curry with Cashews Quick, easy, and delicious one pot dish, perfect for any night of the week! Lean Joyce chicken breast tenders are coated with spices, and cooked in a ginger, garlic, onion, coconut milk, and curry sauce. Toss in fresh kale at the end, and top it all off with fresh cilantro and chopped cashews! This dish is mild, but offers the option for extra spice to taste. This full flavored versatile dish will become a go to dinner option for many nights to come! $3.50 per serving
	Greek Meatballs with Lemony Dill Baked Rice This Greek inspired beef and veggie dish is bursting with harvest season freshness! The meatballs are packed with fresh mint and lemon zest to freshen them up for fall. The rice cooks in the same pan, to minimize clean up. Then add in farm fresh zucchini, cherry tomatoes, and plenty of dill and lemon juice! This dish is super easy, yet well balanced, and packed full of flavor! $3.50 per serving
	Roasted Sweet Potato Soup with Coconut Milk and Lime This soup is easy to make but the flavors are anything but simple. Roasting the potatoes first adds a subtle smokey flavor that pairs well with the lime and coconut. Your tastebuds will think they have been transported to a faraway tropical island! $3.50 per serving
	Roasted Carrot & Lentil Salad with Cashew Dressing Sweet roasted carrots are mixed with satisfying lentils and crisp greens. Top it off with a creamy cashew dressing, for a super healthy dish that is light but filling at the same time! $3.50 per serving
	Chicken & Avocado Burritos with Salsa Verde Tex-mex style burritos featuring juicy chicken from Joyce Foods, topped with avocado, melted cheese, and sour cream and salsa verde for a tangy, creamy sauce! Packed with fresh, flavorful ingredients this is a delicious, healthy meal for any night of the year! $3.50 per serving
	Caldo Verde (Portuguese Potato, Kale, and Sausage Soup) Caldo Verde is a hearty, delicious, and healthy, Portuguese soup, featuring potatoes, green kale, and sausage. Traditionally, Caldo Verde is made with Portuguese Linguica, but we substitute local Andouille Sausage from Firsthand Foods as a tasty and flavor-packed local alternative! The potatoes simmer in the broth until soft, then are mashed into the broth, for a silky, creamy base. Then pack in the kale, and sauteed Andouille for a satisfying, healthy meal, that is super easy to put together! $3.50 per serving
