We work directly with local, NC farmers to deliver the freshest food from their fields to your door!

• Unlike national brands that ship produce around the country from large agricultural operations, we work directly with the small farmers in our area. Many of the same farmers you see out at local markets. They harvest fresh for us every week, and we carefully pack your box the same day that you receive it. We use our own delivery vehicles and staff to keep everything fresh, safe, and handled with care. This is how local is supposed to work!

Aside from fresher, higher quality food, one of the big benefits of ordering food while it is still in the fields is the ability to coordinate meals based on your weekly needs and desires! Every week we compile a list of suggested recipes and meals that you can order for the upcoming week. Papa Spud's portions out the fresh items from our farm partners, or anything else that you do not have on hand, so that you get meals ready to cook, without any excess or waste. It is a much more efficient system that saves everyone money, avoids trips to the grocery store, and also helps local farms prepare for upcoming demand and needs!

	Mediterranean Couscous Salad This vibrant Mediterranean couscous salad is a refreshing blend of flavors and textures, a perfect taste of the upcoming harvest season! Tender, pearl-like couscous forms the base, while juicy grape tomatoes and crisp cucumbers add a burst of freshness. Fragrant mint and dill elevate the dish with bright, herbaceous notes, creating a light yet satisfying salad. Tossed with a simple lemon dressing, this Mediterranean-inspired dish is both refreshing and delicious. Serve as a side or top it with your favorite protein for a full meal! $3.50 per serving
	Chorizo & Potato Tacos with Guacamole Taquero This taco-stand style dish is packed with authentic flavors and fresh produce, and is super easy to make. It features Mexican chorizo from Firsthand Foods, and red potatoes! The chorizo spices and oils are soaked up beautifully by the potatoes during cooking. The hearty filling is then topped with a fresh, authentic avocado and tomatillo sauce from Northern Mexico, where green salsas predominate. Serve it all over warm tortillas with fresh cilantro and chopped onions! Delicious, fresh, and easy! $3.50 per serving
	Dijon Tarragon Chicken with Cremini Mushroom Sauce This French style chicken dish is easy to whip together for a weeknight meal, but sophisticated enough for a weekend get together with guests! Delicious, juicy, Joyce Farms chicken breast is cooked to perfection then combined in a creamy mushroom, onion, and garlic sauce. The Dijon mustard is just enough without overpowering the dish, and a sprinkling of fresh tarragon from brings it all together! $3.50 per serving
	North Indian Chana Masala (Spiced Chickpeas) Chana Masala is a beloved North Indian dish that celebrates the hearty flavor of chickpeas simmered in a tangy, spiced tomato gravy. Fragrant with ginger, garlic, cumin, coriander, turmeric, and garam masala, it strikes a satisfying balance of warmth and brightness. Often served with rice or scooped up with fluffy naan or crispy bhatura, Chana Masala is comforting, nourishing, and boldly flavorful — an everyday staple with the soul of a classic. $3.50 per serving
	Caldo Verde (Portuguese Potato, Kale, and Sausage Soup) Caldo Verde is a hearty, delicious, and healthy, Portuguese soup, featuring potatoes, green kale, and sausage. Traditionally, Caldo Verde is made with Portuguese Linguica, but we substitute local Andouille Sausage from Firsthand Foods as a tasty and flavor-packed local alternative! The potatoes simmer in the broth until soft, then are mashed into the broth, for a silky, creamy base. Then pack in the kale, and sauteed Andouille for a satisfying, healthy meal, that is super easy to put together! $3.50 per serving
