Zucchini Cake

A yummy way to use zucchini!  It is a little like a cross between a spice cake and a carrot cake, only BETTER!  Very moist and the walnuts really give it good texture and flavor.

1 c vegetable oil
2 c sugar
3 eggs
2 t vanilla extract
2 c flour
1 t baking soda
1/2 t baking powder
2 t cinnamon
2 c grated zucchini (leave skins on; one large zucchini will yield aprox. 2 cups)
1 c chopped walnuts

In a large bowl, combine dry ingredients and set aside.  In another bowl, mix together oil and sugar. Add eggs, one at a time.  Beat well after each egg.  Stir in vanilla. Mix in the dry ingredients alternating with the grated zucchini.  Fold in the walnuts. (I am not a huge fan of walnuts, but they really make this cake!).  Pour into greased and floured 13 x 9" pan.  Bake 40-50 minutes at 350 degrees. Frost as desired.  I used a vanilla buttercream frosting.  Cream cheese frosting would work well, too.  Alternatively, you could skip the frosting and just dust with powdered sugar.
