Cobbler is a great way to use a variety of fresh seasonal fruits. You can make it in the spring with strawberries, summer with blueberries and blackberries, late summer with peaches, or fall with apples. It’s also a simple and easy to make dessert that really lets the fresh seasonal fruit shine.
Here's what you'll need:
6 peaches 1/2 cup sugar 1/4 cup butter
Batter: 3/4 cup flour 3/4 cup sugar 3/4 cup milk 2 teaspoons baking powder Pinch of salt
The first thing you want to do is prepare the fruit. Peach cobbler is a little more laborious than other types of cobbler, because the peaches need to be peeled and chopped first. You can peel peaches the old fashioned way, with a knife. Or, you can boil them for about a minute, dunk them in a pot of cold water to stop the cooking process. This will loosen up the skin on the peach, which you can now peel off with your hand. Once your peaches are peeled, chop them into bite-sized pieces.
Next, melt the 1/4 cup butter in a roughly 9" x 13" baking dish. Add chopped peaches and 1/2 cup sugar to the melted butter, mix ingredients together, and spread them evenly across the baking dish.
At this point, you can go ahead and preheat your oven to 350F. Then, you can prepare the batter for the dish. Combine 3/4 cup flour, 3/4 cup sugar, 3/4 cup milk, 2 teaspoons baking powder, and a pinch of salt. Mix well until the batter is smooth.
Pour the batter evenly over the peaches. However, do not mix or stir, you just want an even layer of batter on top of the peach mixture. Once your oven is at temperature, bake for about 35 - 40 minutes.
