Summer Squash, Peppers, and Tomatoes

Peppers, Bell, Green | Squash, Yellow | Squash, Zucchini | Tomatoes, Slicing |
Ingredients:
1 lb. summer squash
1 green pepper
2 small tomatoes
1/2 yellow onion
2 Tbsp olive oil
2 cloves garlic grated parmesan cheese
salt and pepper

Method:

Heat olive oil in a large saucepan placed on medium high heat. Add sliced green pepper, sliced summer squash, sliced onion, and chopped garlic. Stir fry until veggies begin to turn brown. Meanwhile, slice then salt & pepper tomatoes. Once veggies turn brown, add chopped basil (fresh or dry), as well as sliced tomatoes to the pan. Heat tomatoes evenly for about 5 minutes, remove from heat, sprinkle with parmesan cheese, and serve.
