Swiss Chard Wraps

Ingredients:
1 bunch swiss chard
1 tomato sliced
mozzarella cheese
olive oil
salt and pepper

Method:

Clean swiss chard well, and remove/discard stalks. Steam leaves for 1-2 minutes, careful not to overcook. Brush olive oil onto steamed leaves. Lay chard leaves flat, then place tomato slices and mozzarella cheese on top. Wrap leaves around tomato and mozzarella and bake at medium heat just until cheese begins to melt. Add salt and pepper to taste, serve.
