Greens, Collard |
Ingredients:
1 bunch collard greens
3 strips bacon
1/4 cup water
2 tbsp cider vinegar
1 tbsp sugar

Method:
Cook 3 strips bacon in large frying pan with lid. Remove bacon from pan, crumble, and set aside. Do not remove bacon grease from pan. Wash collards, cut out stem, roll and slice into small strips. Add water and collards to bacon grease in pan. Cover and simmer on medium low for about 20 minutes until wilted and soft. Stir periodically and add more water as needed. When collards are cooked, add vinegar and sugar. Stir and simmer for about 1 minute.
