Cranberry Sauce w/Orange and Nuts

Ingredients:
11/2# Fresh Cranberries--rinsed and picked over
1/2# Fresh Cranberries--rinsed and picked over
6-7C Sugar
11/2C Water
11/2--2T Fresh Grated Orange Rind
11/2-2C Fresh Squeezed Orange Juice
1-11/2C Walnuts (Amonds, Pecan--or
any combination of nuts)

Method:
1. In a large sauce pan combine 11/2# Cranberries,
Sugar, and Water.
2. Cook, stirring often, until the cranberries have
popped and the sauce has thickened.
3. Skim off any foam.
4. Add the remaining Cranberries, Orange Rind and Orange
Juice.
5. Cook, stirring occasionally, until cranberries are soft and
still have the skins on.
6. Skim off any foam.
7. Mix in the nuts.
8. If the sauce is too tart, mix in more sugar.
9. If the sauce it too sweet, mix in more water
orange juice and/or more orange rind
10. Pour into a large bowl.
11. Let cool completely, then refrigerate over night
to set.
