Corn and Zucchini Salad

Ingredients:
1 1/2 T. fresh lime juice
1 T. white wine vinegar
1 t. olive oil
1 garlic clove, minced
1/4 t. salt
dash cayenne (optional)
2 c. fresh corn kernels
1 zucchini, finely diced (about 1 1/2 cups)
1 small onion chopped
3 T. chopped parsley or cilantro

Method:
To make the dressing combine the lime juice, vinegar, oil, garlic, salt (and cayenne if desired) in a large bowl. Add to the dressing the corn, zucchini, onion and parsley or cilantro. Toss to combine, chill and serve.
