Collards (Pressure Cooker method)

Ingredients:
1 Bunch Collards
2 Tbsp. bacon fat (or olive oil)
1 & 1/2 qt. water
1 & 1/2 tsp. salt (or to taste)
Crumbled bacon (optional)
Vinegar (cider or balsamic) or Hot Sauce

Directions:
1. Rinse collard leaves in cold water to remove any dirt.
2. Drain leaves on kitchen towel.
3. Cut along stalk on either side to remove stalk. Save cut leaves.
4. Stack 3-4 leaves on top of each other and roll into cigar shape. Continue until all leaves are cut into strips.
5. Cut roll of leaves into strips 1 inch wide.
6. Pour 1 & 1/2 qt cold water into pressure cooker pot.
7. Add 1 & 1/2 tsp. salt to water.
8. Pour bacon fat into water.
9. Add collard strips.
10. Set pressure cooker to cook on High for 9 minutes.
11. When finished cooking, release pressure from cooker.
12. Open pressure cooker carefully to avoid hot steam.
13. Drain collards. Top with bacon bits and serve with a little vinegar or hot sauce if desired.
