Scandinavian Apple Cake

A rich, light cake filled with apples-- the Scandinavian equivalent of apple pie!

Ingredients:
3/4 cup unsalted butter, plus 2 tsp. for greasing pan
1 & 1/2 cup all-purpose flour
2 tsp baking powder
2 tsp ground cinnamon
1/2 tsp salt
3 large eggs
1 & 1/3 cup sugar
2 large or 3 medium firm, tart apples-- peeled, cored, and sliced into 16 slices each.
1/2 cup sliced almonds

Directions:
1. Preheat oven to 350 degrees. Butter a 10-inch springform pan using 2 tsp of the butter and set aside.
2. Melt 3/4 cup butter and set aside until room temperature.
3. In a small bowl, combine flour, baking powder, cinnamon, and salt.
4. In a large mixing bowl, beat eggs and sugar until light and fluffy-- about two minutes. Stir in melted butter. Fold in dry ingredients with a spatula just until combined.
5. Add apples and mix until they are coated with batter. Scoop batter into prepared pan. Distribute almonds over top.
6. Bake cake in center of oven until a toothpick comes out clean, about 45-50 minutes. The top will be well-browned and the sides will feel firm to the touch. Set cake on wire rack and cool completely. Unmold and serve.
