Kohlrabi Fritters w/Cilantro Lime Yogurt

Ingredients:
2 medium bulbs of kolrabi
2 whole eggs, lightly whisked
2 whole spring onions, thinly sliced
1/4 c chopped parsley
3/4 t salt
1/2 t pepper
3/4 c rice flour
1/2 t chili flakes
vegetable oil for frying

Directions: Grate kohlrabi bulb into bowl. (Reserve leaves for another purpose.) Add eggs, onions, herbs, flour, and seasonings. Gently mix all ingredients until they are completely incorporated. Form the kohlrabi mixture into 1-2 oz. fritters. Add 1-2 T vegetable oil to large skillet. Heat oil until it shimmers. Add fritters to the pan, a few at a time. Be careful not to overcrowd. Cook fritters until they are golden brown on the first side, about 2 minutes, and then flip them over. Cook for about same amount of time on other side. Remove fritters from pan and place on paper towel to drain. Serve fritters hot with cilantro-lime yogurt.

Cilantro-Lime Yogurt:
1/2 c plain yogurt
1 and 1/2 T lime juice
1/4 c chopped cilantro
1 T honey
