Oak Leaf Lettuce Salad with Pine Nuts, Red Grapes & Blue Cheese

1/3 cup pine nuts
2 T vinegar
6 T olive oil
1-2 t honey
1/4 t salt
1 lb. red & green oak leaf lettuce
1-2 T chopped shallots or red onion
1 & 1/2 c seedless red grapes, halved
1/2 c crumbled blue cheese (can use more if desired)
fresh ground pepper

Preheat the oven to 350°. Spread the pine nuts in a metal pie plate and bake for about 8 minutes, or until lightly toasted. Transfer to a plate and let cool. Combine lettuce, shallots, grapes, and blue cheese in a large bowl. Whisk together the vinegar, olive oil, honey, and salt. Pour over lettuce and toss gently to coat leaves. Sprinkle with pine nuts and pepper. Serve. (8 servings)
