How to Store Fresh Tomatoes!

Tomatoes are very delicate fruits with complex flavors. As such they are best stored on the counter top, not in the refrigerator. Refrigeration damages the membranes inside the tomato and causes them to lose flavor and turn mealy. This is one reason that grocery store bought tomatoes from out of state tend to be so tasteless, they are shipped across the country under refrigeration. Tomatoes actually even continue to develop flavor after picking, as long as that process isn't hindered or slowed by refrigeration. So, for best flavor, keep your tomatoes on the counter, keep an eye on them as they will deteriorate faster this way and be ready to use them when you do recognize early signs of over-ripeness.
