Rum Raisin Rice Pudding Topped with Fruit

Apples | Blueberries | Strawberries |
Ingredients:
1/2C Raisins
Rum to cover raisins
1Quart Milk (Any--I use skim)
1/4C Long Grain Rice (Any--I use Brown Rice)
1/2C White Sugar
1t Vanilla Extract
1/2t Nutmeg
Bluberries (Optional)
Strawberry Sauce (Optional)
Fresh Strawberries (Optional)
Fresh Rasberries (Optional)
Fresh Blackberries (Optional)
Chopped Apple (Optional)
Method:
The Night Before soak the raisins in rum overnight

1. Preheat oven to 350
2. Mix the milk, rice and sugars in a bread loaf pan (Do NOT use a silicone pan)
and bake uncovered for about 2 hours. Stir mixture every half bour.
3. Add raisins to pudding. Add the Vanilla and nutmeg and mix carefully.
4. Bake the pudding without stirring about 30mins or until rice is very tender.
Serve warm or cold.
Top with any of the optional fruits, or any combination of optional fruits.
