Using Sugar to Extend Storage Life of Strawberries

Who doesn't love strawberries? They're delicious! The problem with strawberries and other berries for that matter, is they don't keep very long. Even when purchasing direct from local farms, they often only keep for a few days, before you start to notice softening, bruising, or other signs of decline. When you start to see these signs of deterioration, you can extend the life of your berries by adding sugar. With strawberries, simply cut off the tops and halve or quarter them. Combine 1 lb. of strawberries with about 2 teaspoons of sugar, mix well, then refrigerate. The sugar is a natural preservative that creates a hostile environment for microbial growth, but matches well with sweet foods, like strawberries. By mixing your berries with sugar, you should be able to squeeze another few days of storage out of them. Just don't keep them too long, as the sugar will begin to ferment over time. This trick can be used with other types of berries as well.
