This week we saw the first Sweet Dumpling Squash of the season. Sweet Dumpling is a small winter squash, with attractive speckled coloring. The flesh is orange, sweet, and tender. The relatively small size of the sweet dumpling squash makes them great for stuffing. You can cut them in half, roast them, then stuff them with rice, beans, veggies, herbs, etc. and present them intact for beautiful single servings.
