This is the easiest and most delicious dip, perfect to bring to a party or for football Sunday! I am constantly asked to bring this to events. The beauty is how flexible it is (I never actually measure anything) and that you can use canned or fresh jalapenos, and add in cheese or bacon or any other delicious ingredients you have! If you like jalapeno poppers, you will love this dip!
This will make a smallish bowl of dip, double it if you have a larger group:
1 pkg. cream cheese
1/2 cup mayonaise
2-3 jalapenos, minced (number and whether you seed them depends how hot the peppers are and how hot you want your dip!)
1/4 cup parmesan cheese
1/2 cup Panko bread crumbs
Additions: can of green chiles, 1/2 cup cheddar cheese, bacon pieces
Mix cream cheese, mayo, and jalapenos together by hand or in a food processor, until smooth. Spread dip into a baking dish (I like to use a nice dish that is oven safe so that I can serve it hot out of the oven). Sprinkle parmesan and bread crumbs over the top. Add a few slices of jalapeno on top for garnish if you want it to look pretty and warn people that it is spicy! Bake at 375 degrees for about 20 minutes or until it is bubbling and slightly browned. Serve with tortilla chips, carrot sticks, baguette or anything else that is good for dipping!
