Goat-Cheese Stuffed Jalapeno

This recipe is so good and so simple I almost want to keep it my little secret. :-)

Just three ingredients:

1. Jalapeno peppers, sliced lengthwise, cored, and seeded
2. Goat cheese
3. Prosciutto

Preheat oven to 350. Stuff the peppers with the goat cheese, so it fills the pepper and is slightly mounded. Wrap each stuffed pepper with 1/2 slices of the prosciutto.

Line a cookie sheet with parchment paper (not required, but makes cleanup a snap). Bake at 350 for 30 minutes. Note to the cook: the goat cheese that melts out and browns on the pan is delish; snag that as your special treat. :-)

Even folks who don't like spicy tend to love these. The seeding/coring combined with the cooking makes the jalapeno much much milder. The goat cheese and prosciutto complement what little heat is left and the combination is just divine.

Warning: There will be no leftovers.
