Blueberry and Sweet Corn Salad


Delicious summer salad featuring fresh, local sweet corn and blueberries from Ivanhoe, NC. Refreshing, crunchy cucumbers, and a little kick from chopped jalapeno pepper combine beautifully with sweet blueberries and corn in a perfect cookout salad for summer. The honey lime dressing has the perfect amount of spicy sweetness. This salad also keeps very well, so you can prepare it ahead of time and enjoy a lazy summer afternoon!

We Provide
Sweet Corn, local (4 ears)
Blueberries, local (3/4 cup)
Cucumber, local (1/2 cup)
Green Onion (1/8 cup)
Cilantro, local (1/8 cup)
Jalapeno, local (1 Tbsp.)
Lime juice (1 Tbsp.)

You Provide
Olive oil (1 Tbsp.)
Honey (1/2 Tbsp.)
Ground cumin (1/4 tsp.)
Salt (1/4 tsp.)

1. Bring water to a boil in a large pot. Add corn and cook until tender, about 5 minutes. Remove corn from water. When it is cool enough to handle, cut corn kernels off of the cob.

2. Slice cucumbers in half lengthwise. Scoop out seeds with a spoon. Slice cucumbers.

3. Combine corn, cucumbers, blueberries, green onion, cilantro, jalapeno, lime juice, olive oil, honey, cumin, and salt. Mix well, add additional seasoning to taste. Chill in the refrigerator until ready to serve.
