Mediterranean Stuffed Squash


This dish is a super easy, vegetarian meal or side that the whole family will love! Scoop out the insides of the squash, and saute with butter, onion, and garlic. Then combine the "stuffing" with feta and mozzarella cheese, fresh herbs, and an egg to hold it all together. Fill the squash shells up with the stuffing and roast in the oven. A delicious and healthy meal, easy to make, and very inexpensive!
