Field of Creams Cheese


This is our flagship cheese, made of bright airy goat's milk, with woodland herbs and spices like rosemary and juniper berries dusted lightly in the rind. The idea is not to overpower the milk, but to tease out those flavors in the milk itself. We love the way this cheese evokes with woodland "browse" (vines and weedy plans and low-hanging tree branches) which the goats most love to eat. Since we also make blue cheeses in our dairy, sometimes the blue escapes from containment and decides to visit another cheese. That happened with this batch, so you'll see a light dusting of rogue blue on the outside. It's all delicious, and part of the story of artisan cheeses. We've won multiple national awards for this baby, and you'll see why. One of our customers called it "the little black dress of cheeses." It's terrific with an array of wines, and complements charcuterie beautifully.
