Smothered chicken is a soul food classic, with regional touches throughout the south. In fact the regional, and even family diversity is so much, that most consider this more of a technique than an actual recipe. Our version touches on African American influences combined with Creole culture in Louisiana. The Holy Trinity (celery, green bell pepper, and onion) is brought out in this dish, as well as just honest, humble ingredients that when prepared together, allow us all to eat like kings!
