Heirloom Eggplants
Who knew there were so many different types of eggplant?! They come in all shapes, sizes, and colors--
from creamy white to neon lavender to bright green. Often thought of as a vegetable, eggplant is
actually a fruit. It belongs to the same family as tomatoes and like the tomato, eggplant lends
itself to a variety of savory preparations. Grill or roast it, steam or deep-fry, boil or saute--
eggplant cooks up quickly and works with a variety of flavors. Larger globe eggplants are great for eggplant
focused dishes. Smaller Japanese or Kermit varieties require more work to peel, but they tend to have
fewer seeds and a less bitter flavor, they are a good option when you just need a small amount of eggplant.
