Sweet Potato Soup

Ingredients:
3-4 Tbs. olive oil
1 onion chopped
3 cloves crushed garlic
2-3 medium sweet potatoes, peeled and chopped
3/4 cup chopped celery
1 can diced tomatoes
1 green pepper chopped
1 1/2 cups cooked chickpeas or 1 can chickpeas
3 cups stock (vegetarian or chicken)
dash of cinnamon
dash of cayenne
1 bay leaf
1 tsp turmeric
1 tsp basil
salt to taste



Method:
In a large soup pot saute onions, garlic, celery and sweet potato in olive oil for 5 minutes. Add seasonings and the stock. Simmer, covered for about 15 minutes. Add remaining vegetables and chickpeas. Simmer 10 more minutes or until the vegetables are as tender as you like them.
