Seagrove, NC - | While working in the computer field and living in the suburban setting, Bill and Dianna Osmolski were always on the lookout for new challenges. Having a tendency of becoming bored, they occupied their free time learning all sorts of new skills, from outdoor sports to home gardening. After retirement from the computer field, Bill and Dianna moved to the coast of North Carolina. They enjoyed the relaxed lifestyle that coastal North Carolina had to offer, but managed to stay busy embarking on new adventures. Not having the initial expertise to complete a project never stopped Bill and Dianna from learning everything they could and then trying until they were satisfied with the results. This mentality would no doubt have a significant impact on their decision to start farming. In 2003 while on trip to the Uhwarrie National Forest, Bill and Dianna fell in love with the green rolling hills and the old-growth hardwood forest of central North Carolina. They particularly enjoyed the contrasts between central and eastern North Carolina farms. In 2005, the couple returned with ambitions to purchase land in Randolph County, North Carolina. The couple found a piece of property that included hardwood forest, rolling pastures, a house, and a barn. The thoughts of the farming lifestyle intrigued Bill and Dianna, and the property was purchased. Bill and Dianna had little previous experience in raising cattle. Thinking back to the other challenges that they had accomplished strengthened their confidence to begin learning the cattle trade. They read books, explored the internet and mingled with area cattle farmers learning everything they could from electric fencing to water lines. Bill and Dianna did not want to just produce beef; they wanted to raise the most natural meats possible. Pursuing these objectives, Bill and Dianna established Green Acres Ranch. Green Acres’ cows are fed only grass and are given no anti-biotics, no growth hormones. They cut and bale their own hay with the satisfaction of knowing that Green Acres livestock are eating grasses that are free of pesticides and fertilizers. Grass fed beef is very different and healthier than beef that comes from feedlots. Grass fed beef is lower in calories and higher in conjugated linoleic acid (CLA) as well as Omega-3 fatty acids. As opposed to traveling thousands of miles from a feedlot, Green Acres Ranch’s livestock are slaughtered less than 10 miles away by Key Packaging, a small-scale slaughter and packaging house. Green Acres Ranch currently raises free-range hogs, chickens, and turkeys. A garden that provide both summer and winter crops provide Bill and Dianna with fresh vegetables year round, which they especially enjoy feeding to guest at their table. Bill and Dianna summarize the mission of Green Acres Ranch with the following statement: “All of our animals are loved; we consider them part of the family. We still get excited and are grateful when a calf is born or a chicken hatches in our hand, or when our lambs give us kisses. Its hard work but at the end of the day we feel like we accomplished something. Don’t get me wrong, I still long for a quiet day lying in the sun on the beach. Would we remember how to relax? Would we want to?
