Mrs. Chung was raised in a restaurant family, holds a degree in foods and nutrition, has cooked up her specialties on both coasts of the United States, and taught classes on using soy as a meat substitute for years.
From 1998 to 2003, Mrs. Chung obtained three grants from the USDA to study growing fresh soybeans in North Carolina. Her goal is to produce fresh green soybeans (edamame) for American consumers and to help Americanís farmers seek alternative crops.
