Delicious fall meal packed with beautifully balanced flavors, bright colors, and lots of pop! Butternut squash and mushrooms are tossed with chipotle powder and roasted for a delicious, smoky flavor. They are then combine with steamed kale, gooey cheese, a pesto-like kale and pepita salsa, and topped with a smooth, creamy chipotle butternut crema! This dish will be an immediate hit, it's easy to put together, but looks and tastes stunning!
