Pauline is a washed rind, slightly pudgy, semi-soft textured cheese. It is named for the French cheese Saint-Paulin, a delicious, buttery cheese, originally made by Trappist Monks. Goes great on a cheese plate, on crackers or bread, with preserves, and a monastic style beer!
