Top it all off with some sweet local collard greens and you have a bright flavored dish, this perfectly showcases the winter-spring seasonal transition!

1 lb. tomatoes
1 cup onion
1 bunch collard greens, local
1 cup yellow grits
1 tablespoon fresh thyme

You Provide:
4 garlic cloves
3 tablespoons olive oil
3 tablespoons of butter
3 tablespoons apple cider vinegar
salt and pepper
pepper flakes if you like spice
