Pozole de Frijol


Vegetarian version of a classic spicy Mexican dish. Hominy, pinto beans and ancho chile peppers are simmered with tomatoes, onions and garlic in a lime-spiked vegetable stock for a hearty, warming stew. Serve with a garnish of cheese, sour cream, cilantro, shredded cabbage, scallions, etc., and a side of tortilla chips.
