Red & Yellow Beets
With beautiful spring weather, we are beginning to see the first of the local beets from our growers! This week we have Red and Yellow
Beets from Lee's Produce on the order page. Also known as "blood turnips" because of their bright red roots, cooked beets have
a soft buttery texture. Beets can be eaten raw or prepared in a variety of ways, including roasting which seems to bring out their
earthy sweetness. If you have always been a beet-hater, give them one more try in the Savory Roasted Roots Vegetable recipe below!
