The essential ingredient in the green salsas of Mexican cuisine is not the tomato, but the tomatillo—a fruit with a citrusy, sweet flavor!
Bright green in color, the tomatillo looks like a small, under-ripe tomato hidden inside a delicate, paper-like husk. Closely related to
tomatoes (the name means "little tomato" in Spanish), tomatillos liven many Latin American dishes. Try them in salsas, tacos, enchiladas,
guacamole, soups, huevos rancheros, or roasted on the grill with shrimp. Fresh ripe tomatillos will keep in your refrigerator for about two weeks.
