Roasted Asparagus with Grapes


This tasty spring dish adds a little flair to the fresh, local asparagus we have coming in right now. The asparagus is coated with Panko breadcrumbs and then roasted with fresh grapes to give it a nice crunch and some sweetness from the grapes. Then it is seasoned with a pinch of red pepper for a kick, and topped with lemon zest for a balanced and fresh taste!

Panko Bread Crumbs (3/4 cup)
Kosher Salt (1 tsp.)
