This warm salad combines classic French Lentils with fresh thyme, carrots, celery, onion, kale, and pumpkin seeds in an olive oil and dijon mustard dressing that is absolutely delicious. It is filling, yet light all at the same time, and is incredibly healthy despite the delicious taste.
