Local Honey

Back on the list for next week, we have locally harvested honey from The Pleasant Bee! Local honey makes a great gift or stocking stuffer, or use it to make your own homemade granola for gifts! The Pleasant Bee honey comes in available in two sizes-- a 16 oz. Honey Jar and an 8oz. Honey Bear.

Homemade Honey Golden Granola:
Makes 15 cups

6 cups old-fashioned oats
8 oz. sliced almonds
1 cup dried cranberries
1 cup chopped dried apricots
1 cup light brown sugar
1 tsp. cinnamon
1/2 tsp. salt
1 1/2 stick unsalted butter
1/2 cup local honey

1. Preheat oven to 350F. Mix oats, almonds, dried cranberries, dried apricots, brown sugar, cinnamon, and salt in a large bowl.

2. Melt butter over medium heat in a small saucepan. Stir in honey, and mix well. Pour hot butter honey over the oat mixture, and toss to distribute evenly. Spread granola onto a parchment lined baking pan. Bake in the oven, stirring occassionally, until oats are toasted and sugar begins to caramelize, about 35-40 minutes. Remove from oven, and let granola cool fully on the pan. Transfer into bags and spread holiday cheer!
