Five varieties of Thanksgiving Sweet Potatoes


Ready for the holiday season, we have 5 varieties of local sweet potatoes available for next week! Enjoy the tried and true NC Covington Sweet Potatoes, the super sweet Hatteras Variety, or add some color to your plate with one of the Purple Varieties!

Covington:
“The NC Potato!” These are orange fleshed, rose colored, and smooth skinned. They were developed by North Carolina State University. Known for their great flavor, the Covington is a favorite for mashing or roasting.

Garnet:
These have red skin and are medium to large in size. The flesh is orange, firm, dense, and moist. Garnets tend to be slightly moister and starchier when cooked.

Hatteras:
a.k.a “The Outlaw” potato due to the milky sap which makes it exceptionally sweeter than other sweet potatoes. The sap and high sugar content cause dark stains on the skin which can deter some retailers from putting them on their shelves. However, these orange fleshed potatoes are an eastern NC favorite and highly favored for its sweetness.

Murasaki:
These Japanese variety of sweet potato have a purple skin and white flesh. The flesh is soft with a distinct nutty flavor and tend to be drier in texture.

Purple:
These sweet potatoes have a distinct purple skin as well as flesh varying from a vivid violet to bright lavender. When cooked, the taste has a robust rich flavor with a denser texture from most sweet potatoes.
